low fat, low cal chicken in packet!

Hey guys,just wanted to post at least this one recipe for a few people I think that "dont cook" as its REALLY simple and quite tasty!! And low calorie! :)
From: Healthy Homestyle Cooking (I HIGHLY recommend this book, it takes 200 family recipes and cuts them into a fraction of the fat. I live by this cookbook!!)

Chicken in a Packet:
1/2 cup bottled barbecue sauce
4 (4-ounce) skinless, boneless chicken breast halves
1 green pepper, cut into strips
1 sweet red pepper cut into strips
4 small baking potatos or 12 new potatoes, thinly sliced
1/4 teaspoon ground black pepper

Preheat the oven to 350 degrees. Tear off two pieces of foil in the size of a cookie sheet. Place one piece of the foil on a cookie sheet. Spoon half of the barbecue sauce on the cneter of the foil. Layer the chicken, green and red peppers and potatos on top. Sprinkle with black pepper. Top with the remaining barbecue sauce. Place the reamining piece of foil on top. Seal the edges with double folds.

Bake for 50 minutes. Carefully open the packet and check the chicken for doneness. If the chicken is still pink,close the packet and bake about minutes more or until done.
Makes four servings

Note: to make individual packets use four 18"x14" pieces of foil. On one half of each piece of foil, layer the ingredients as directed above. FOld the other half of the foil over the top and seal each packet as directed.

My PERSONAL tip:
I like to make these in individual packets as noted above because they're great for reheating for meals the following day also. :D Its such a quick and easy way to go!!

Nutrition per serving: Calories 203, Fat 2, % Calores from fat 11%, Cholestoral 68.

Hypo, I'll PM you this evening with more specifics on the book. I've used it so many times I can't even begin to count! I love it. :) Its got a neat section for each recipe indicating what the original ingredients would of been, and how much fat, calories was it in, and then next to that it shows you how they altered it with the low fat version and how much it reduced it by!! :) Also helps give me ideas for reducing other recipes. :D I'll be sure to give you more details on it tonight when I have time to look at the book at home! (at work now)
 
that does sound yummy and simple! so is 1 serving 1 potato and 1 of the chicken strips? 203 calories for each packet when you wrap seperately?
 
yes, each packet (one serving) wrapped seperately, 203 calories is what the book indicates. I think, it is just one potato per foiled wrap. Baking potatos (i believe) are relatively small..
 
this preparation is also really good with fish... especially a halibut type fish... with just some white wine, garlic, and lemon slices.. the vegetable can be spinach or even a sweet potato (broccoli doesn't work that grreat becuase it gives off arather pungent aroma that interferes witht he delicateness of the fish)

it should technically be done in parchment paper but that's harder to find -so tin foil is a great substitute... :D and you can make swan shapes out of the tin foil... :D
