Zuchinni Squash Casserole
(the way I made it before I found it was a real recipe)
This stuff is good.
Ingredients:
1 lb Lean Turkey or Extra Lean Beef
2-3 cups Prego pasta sauce
2 cups low-fat mozzarella
2 cups each of sliced zucchini and squash
2 1/2 Portabello Mushrooms
1 medium onion
2 cloves garlic
2 tbs. oil

1. Preheat Oven to 350 degrees.
2. Slice squash, zucchini, mushrooms and mince onion and garlic while thawing meat in microwave (if needed)
3. Heat oil in large pan and throw in onions and garlic
4. While cooking the onions and garlic, brown the meat in a seperate pan (no oil)
5. When onions and garlic are a light golden-brown, add the squash and zucchini and cook for another 5-10 mins.
6. Add prego to meat and simmer
7. Pour the vegetable mixture into a casserole dish and spread evenly
8. In the pan used for the vegetables, cook mushrooms 3-5 mins. and pour into casserole dish also
9. Pour meat-sauce mixture onto vegetables into casserole dish and top with cheese
10. Bake for about 20-30 mins.
