Low Cal Strawberry cheesecake bites

So i found this recipe on the internet and changed a few things and came out with some DELICIOUS sweet low cal cheesecake bites !

You need :

8oz fat free cream cheese
1/3 cup splenda
approx 4 tbsp's graham cracker crumbs
a box (approx 40) strawberries
1 teaspoon lemon juice

1. Hollow out the strawberries
2. Mix up cream cheese, splenda and lemon juice in a bowl
3. Add mixture into strawberries, then dip each into graham cracker crumbs
4. Chill for an hour and VOILA !

If my calculations are correct the nutritional content of each strawberry is :

14 calories, 2.1g carbs, <1g fat, <1g sugar

The original recipe called for low-fat cream cheese and sugar, however if you substitute for spenda and fat-free cream cheese they still come out tasting amazing. If you have a big SWEET TOOTH you can also add a few chocolate chips to the mixture which adds about 8 calories per strawberry.

Heh I've never seen the words 'low cal' and 'strawberry cheesecake' together in a sentence before ;). We don't have graham crackers over here but I gather they are similar to digestive biscuits?

These things are amazing though !

yes indeed they are like digestive biccies. When i came to America id never heard of graham crackers only digestives. So yes they are the same.

they are good to have after i bbq i find.

Invite some people over, and make a box of strawberries worth of them. When i eat them i normally have about 4 which is enough to satisfy my sweet tooth :) then i let everyone else finish them off !

out of sight out of mind hehe
 
there's a gourmet store in my area that sells cheesecake stuffed strawberries that you can sort of improvise your recipe...

make the cheesecake mixture -which is really just low fat cream cheese, vanilla and splenda...

then get some mega huge strawberries, cut of the green stuff on the top and a dig a little hole in it so you core it well.. then stuff the strawberry with the cheesecake filling...

they also drizzle with dark chocolate - which really doesn't add on that many calories cuz ou aren't using that much..
 
yeah thats basically what i did. minus the vanilla because i thought they tasted cheese-cakey enough.

Drizzling with choc is a nice idea if you want them to look really presentable for a party etc. i may do that next time instead of graham cracker crumbs :)
 
These sound amazing! I will be making them tomorrow and im sure my hubby will appreciate it too ( found him munching a doughnut in the car cos he didnt want me to feell bad for not having one....think he might be feeling a little deprived..lollll)
