This is an easy salad that tastes great.
This makes around six servings.
10 ounces frozen baby peas, thawed
1 cup diced celery
1/4 cup chopped green onions
1/2 cup chopped cashews
1/2 cup fat free ranch dressing, eyeball it so it's not too saucy
1/4 cup BaCos bacon chips
Honestly I just eyeball the ingredients starting with the peas and adding the rest to it until it looks like a good mix.
1. combine and mix all ingredients except bacon chips cover and refrigerate for 2 hours or more.
2.Sprinkle bacon chips into salad before serving, use the chips rather than bits, the bigger sized chip doesn't get soggy and gives the salad some crunch. Those looking to add some fat to their diet could use real crumbled bacon.
I've made additions to this salad to make it into a one dish meal by adding some protein and eating a bigger serving. I've omitted the green onions and used pearl onions with lean ham cubes for that.
