Where I live, junior sports organisations usually also run adult sports. They usually advertise a sign-up date in the local paper or online in local groups prior to the season start for each sport. A quick internet search will usually come up with the websites for sports in the local area and these pages will usually list sign-up days as well.
My husband plays masters football (soccer), the sign up for this was done online but advertised both in the paper and online, usually they also have in person signup days but this was canceled due to covid.
When I was playing rugby, the sign up was similar.
For 10 pin, here, the alley has league sign up sheets posted on a wall.
When I lived in Canberra, Broomball and Ice hockey, had sign up at the rink.
Individual sports can be a little different.
