Lentil Salad
1 Cup Dried Lentils
3 cups water
2 really ripe tomatoes, chopped
3 scallions, chopped
2 jalapeno peppers, chopped
1 green bell pepper, diced
1 yellow bell pepper, diced
1 red bell pepper, diced
juice of 1 lime
1 tbs of good olive oil (I honestly think this isoptional, since the tomatoes are usually juicey)
4 tbs fresh cilantro chopped (or flat leaf parsley if you don't like cilantro)
Rinse lentils in some cold water in a strainer.
Place lentils and water in a pot. Bring water to boil, reduce to simmer. Simmer for 30 minutes or until tender. (depending on how old the lentils are, depends onhow long they take to cook.)
Drain lentils.
Add all ingredients to a bowl, add lentils, and chill about 30 minutes...
Enjoy.
This makes about 4 1/2 cupservings and i think it's about 200 calories a serving (there are 650 calories in one cup of raw lentils - and the veggies are practically calorie free). The veggies you could substite whatever happens to look good, I happen to like the multi colored peppers, but brocolli (steamed and chopped) or even chopped fresh steamed spinache works really well in it.
