Tried this one at the weekend, and it was lovely, very light but loads of flavour. Think I have got the nutritional quantities correct also....
1 Chicken breat skinless, chopped into cubes
1 large fresh Lemon (Unwaxed), chopped into 8 wedges
1 cup of good chicken stock
1 large red oinion
3rd of a cup of fresh Honey (Good quality if possible)
Handfull fresh coriander for garnish
1/2 tblespn olive oil
Put oil in a pan, onto a medium heat and get the oil hot before putting cicken breast in (Else the oil is absorbed into the chicken flesh, rather than flash cooking it). Cook for 3 mins until flesh is slightly coloured.
Remove chicken from pan, and set aside.
Put onion in pan, and fry for 2 mins until softening and coloured.
Add chicken stock, lemon wedges and honey to pan, and cook for further 2 mins.
Put chicken back in pan, stir once, and place lid on pan, turn heat down to allow sauce to simmer for 15 mins.
After 15 mins, remove lid, remove chicken pieces and set aside.
Turn heat up and reduce sauce down to thick sauce. Add chopped coriander and stir for 30 seconds.
Place Chicken on top of rice, baked potato (anything really), and drizzle over lemon & honey sauce.
