AWow!! Has it really been 2 1/2 week since my last post? I wish I had good things to say but all I can say is not only did I fall off the wagon but I then watched it crash, burn, fall off a cliff and then explode before it was swept off by a tornado never to be seen again!!!!! Well, that may be slightly dramatic but you get the idea! I can't believe how time flys. Between Xmas parties, working, photo shoots, school, going away party's, last girls nights ( my best friend moved to south America on Monday

) and training at my stable I ate and drank whatever I could get my hands on and did not exercise save all the running around at work and riding. Doesn't count though!! Anyway, I am back to reform my ways!! I went grocery shopping as my fridge was bare and have made some tasty creations ( quinoa and bean tabouleh is one of them hmmmmm so good! ) anddd in the AM I have a new workout sched to go by. The past month has been a bit cray cray but now that my Bff is off my couch and on her adventure and my bf is away to do some cave diving I have a bit of down time to get myself organized and start getting into some sort of a semblance if a routine. All I want for Xmas is 12 extra hours in my day!! Anyway, I willllllllll find a way to make this work after all it's sooooooooo going to help with my feeling fatigued all the time!

I do work as a Photographer, not full time at the moment but next spring summer with all the bookings I will be! It's loads of fun and very addicting! As for yoga I. Am learning to teach Ashtanga, Hatha and Vinyasa. It's so amazing for you in so many ways. It especially helps me and my busy anxious mind !!!
And you are right about the mornings! I just have to tough it out. So far I have been up late most nights so I Kinda bailed on the early mornings but in the next 13 days I have some time to myself so I'm going to give it another shot!
Here is the muffin recipe! Beware... So addicting!
Pumpkin Muffins
INGREDIENTS
1 1/2 cups (200g) spelt flour ( or flour of choice)
1/2 teaspoon of salt
1 cup (200 g) Sucanat or Brown Sugar. Could use Brown Sugar Splenda if you want. Or other sugar sub. agave or honey??
1 teaspoon baking soda
1 teaspoon baking powder
1 cup (240 ml) pumpkin purée
1/2 cup (120 ml) apple sauce
2 eggs, beaten
1/4 cup milk, almond milk, soy milk, coconut milk... whatever suits your fancy
1/2 teaspoon nutmeg
1/2 teaspoon cinnamon
1/2 teaspoon allspice
3 Tablespoons Cocoa Powder
1/2 cup (120 ml) chopped walnuts toasted
1/2 - 1 cup ( or however much you like) dark chocolate chips or dark chocolate bar choppedÂ
1 Preheat oven to 350°F (180°C). Sift together the flour, salt, sugar, and baking soda, baking powder and sift/mix in cocoa powder.
2Â Mix the pumpkin, apple sauce , eggs, 1/4 cup of milk, and spices together, then combine with the dry ingredients, but do not mix too thoroughly.Â
  Stir in the walnuts and chocolate chips (or pieces)Â
3Â Divide into a 12 muffin tin. Will fill each cup to the top. Bake until a fork or toothpick inserted comes out clean prob somewhere between 20-30min. do not overbake.Â
