I'm pretty lost, could use answers about weight loss...

So, before I begin I'd like to thank you for viewing my post!

These are my stats:
22 male
210lbs
5'9
I do not know how to measure body fat but I used a site and it says I'm 18%?

So, it's been over two months now since I started to get serious about losing weight. I was 241 when I started and now down to 210. I have done a lot of digging and tried to find the best way for me to lose weight. However, whenever I stubble upon information I read that what I thought what I was eating was good for me when it actually wasn't on another site. Credibility in this field seems to be hard to find. I want clear answers to put it simply.

I eat about 1300 calories each day and walk outside 10 miles 3-4 days a week at a pace of about 3-4mph. I time myself for 2 hours during that walk. I also lift arm weights (20lbs) and do pushups/sit-ups/jumping jacks for like 20 minutes. I don't like running, I end up being sore for a few days and it feels exhausting running after 5minutes. For men my age and height I should be eating 2500 calories on average a day but I don't want to wreak my weight that I have struggled to get down and don't want to lose less than 2 pounds a week. I don't even know if my own information about the average calories was accurate, nor do I even know if I am losing 2lbs a week because my weight seems to fluctuate all the time. I weigh myself every other day but see very little difference unless I don't eat anything for over 8 hours. I don't want to do that ever again it feels horrible being that hungry!

I did lose weight in those two months but I wasn't quite sure what exactly I did to lose it. I remember just eating less and I didn't exercise, but I would have my days where I sorta gave up and binge ate at McDonalds or some other fast food place. I have stopped binging like that for over three weeks now.

As far as what I eat this is what I've been eating every day for the past two weeks roughly.

I start my day eating
2 slices of turkey bacon with less sodium and fat
1 boiled egg
A small amount of lightly salted cashews
a slice of split wheat bread
3 cups of water

After breakfast, I wait about an hour and go for my 10 mile walk. When I return I have this for lunch.
A turkey cheese sandwich
(Turkey slices with less than a gram of fat and much less sodium
Fat-free white chesse with two split wheat slices of bread)
A banana or a few slices of apples.
3 more cups of water

An hour later I would do my pushups, lifting weights and those sorts of activities for 20 minutes.
I would feel hungry again. I'm sorta out of ideas for food at this point so I eat out and go for the lowest possible amount of calories in my choices at a fast food place. For example, I'll go to eat a mcdonalds and get one plain mcchicken or a plain hamburger. Later when I come back home the only thing I'll add to it is some ketchup without high fructose corn syrup and the other bad stuff. I'll usually accompany this sandwich with a small amount of potato chips.

I will drink another 3 cups of water!

I only drink water and distilled diet lemon arizona tea.

After that point my meals end for the day, I might have an oatmeal bowl before bed or some oatmeal cookies should I still feel hungry. I will also drink another 3 cups of water.

So, I don't know what is making my weight "stuck", perhaps it's the amount of carbs I'm taking in? Or is it my food choices? I'm lost.

I like to point out that when it comes to food, I'm very closed-minded and don't like to eat anything but what I like. So if you tell me to eat something like salad, I have no desire to eat that. I have a problem eating vegetables and fruits only, it's really about the texture of it. They also taste bland to me. I would have to force myself to eat it, I wouldn't enjoy it. I don't want to come off as a food snob but those are things I don't like eating.

I feel like during this past month my metabolism has been a roller-coaster, it's completely inconsistent.
