How on earth do I eat healthy if I hate vegetables? I like carrots, cooked, and corn. I can eat raw celery, but only with cheese whiz on it:p . I don't mind onions and celery in soup, and I will eat tomato-based things like salsa and spaghetti sauce.

What can I do?
 
So, you like carrots, corn, celery, onions, tomatoes.

Do you like green peppers? brocolli? spinach? cucumbers?
Are you sure you don't like them? When was the last time you tried them? Could it have been the way they were prepared?
 
I think veggies are an acquired taste. If you grew up eating veggies every day like I did, then you don't usually have a problem liking MOST of them (there is bound to be at least 1 or 2 that you simply don't like). But...if you don't grow up eating veggies regularly, then it takes time to start to appreciate them. Try using seasonings on them. Try those fat free butter sprays...they can really liven up a cooked veggie. For a fresh veggie, try a tablespoon or two of FAT FREE ranch dressing. As with any healthy food, you will start to like them more as you eat them more. I have heard a phrase something like "You like what you eat"...meaning, you start to like more what you always give yourself. Keep at it! It is the best way to get all kinds of wonderful nutrients!!!
 
I could probably force myself to put a tiny bit of lettuce on a sandwich, but couldn't eat a whole salad. I can't stand anything to do with broccoli or cauliflower. I will eat green peppers in salsa, but that's it.

I will give cucumber a try tomorrow, maybe some lite Italian dressing with it? Hmmm...
 
I hate veggies to thats 1 of my big problems! I like corn green beans and cooked carrots and peas thats it!! Oh of course the "o"mighty potatoes which isn't the healthest! Anyway I take a multi vitaman and eat my 1-2 servings of greens beans a day! good luck, Tammy
 
I have a super easy cucumber salad receipe.

1 cucumber sliced fairly thin, 5-10 cherry tomatoes (depends on how much you like them, I find them easier to eat than regular tomatoes) 1 oz onion sliced very thin. Throw them in a bowl with a couple tbsp of low fat italian dressing. Super good. Especially if you give it a couple hours to marinate. I usually make it in the morning and have some for lunch.

You can always throw additional veggies in it too. Carrots are good in it, fresh green beans, snow peas, brocolli (try very small pieces).

Oh, and niapage, pototoes are perfectly healthy, especially with the skin as long as you don't smother it with butter and full fat sour cream and bacon and all that stuff.

Bep is completely right, you'll be surprised that once you start eating veggies prepared different ways you might actually like them. I made a spinach lasagna that several girls at work made a fuss about trying because they "hate" spinach. But once they tried it, they were arguing about who got the remaining portions of it. LOL

I was wondering about veggie pasta...I see it doesn't have much in the way of vitamins, but if I use it EVERY time instead of regular, will it help at ALL?
 
Steps up on soapbox...

When someone makes the statement that they hate vegetables it makes me absolutely crazy... Have you tried every vegetable out there? I strongly doubt it, have you experimented with different preparation methods? I strongly doubt it.

Don't be a veggist... give them a chance...

Try spaghetti squash, corn, carrots or turnips or other root vegetables.

Try the vegetables steamed or sauteed with a little bit of olive oil and garlic or roasted for a incredible flavor.

I find canned asparagus to be absolutely disgusting... it's mushy and salty, but fresh asparagus, marinated for a few moments in balsamic vinegar, garlic and thyme then roasted for about 15 minutes are incredible.

Go to the library or bookstore and pick up a cookbook on vegetables and read thru it and find other flavors that strike your fancy.
