HushMuffins

I don't know about you but i love some hushpuppies and it has been one of my most missed items since eating healthy especially now that i am eating so much fish. So i came up with a recipe to make good carb, good fat baked hushpuppies. I call them hushmuffins though cause you bake them in cup cake cups.

2/3 cup whole grain cornmeal self rising
2/3 cup whole grain flour
1 large onion diced
1 tbsp baking soda
1 tbsp smart balance light butter
1/2 cup splenda
1/4 cup skim milk
1/3 cup egg white
dash of salt

mix all together in bowl, should be more on the thick side then runny.
Preheat oven to 375F. Spray cup cake cups with nonstick butter spray (cooking spray whatever, just so they don't stick). Bake until rise and golden.

This makes about 12 hush muffins here are the stats for each

60 calories
11.2 carbs
.3 fat
2 protein

They are pretty good sized too. Granted yeah some sweet potatoes, veggies, so on are better. But if you feel like a cheat on the healthy side, have at it, they are so yummy!
