How Many is Too much?

I cannot remember and no matter what I read I cannot tell for sure. How many different exercises should you do on one muscle group any given workout. I workout now 4 days a week m,t off w, t,f and Cardio 7 days a week ( some sort either Treadmill, Jogging, heavy bag and speed bag) I switched my workout in the 5th week because I was overworking (workouts 5 days a week). Now I am wondering how many exercises per muscle per workout. Most of my workouts I have 4 - 5 exercises with 4 sets of 8-12 reps (beginning warmup set with light weight 12 reps and work up to 8 reps with heaviest weight able to exhaust muscle). After every Set 30-60 seconds of rest and after every exercise 90-120 second rest. Am I still over working with the amount of exercises per night. My workout is broke up like this:
Monday Neck, Trap, Shoulders, Forearms, Cardio

tuesday is chest, tris, abs, lower back, Cardio

wednesday Cardio

thursday, lats (middle and upper), biceps, abs, and lower back, Cardio

friday Quads, Calves, Hams, Cardio

Saturday and Sunday Just Cardio
 
is that 4-5 exercises per body part? or 4-5 exercises per total workout. The way your split is, I'd say its a very advanced routine, but its the same type of routine most pro bodybuilders and powerlifters use. I personally only do 3 exercises per body part. My goals are a bit different than yours. I believe (IIRC) that you were a boxer? You need more strength power and quickness than I do. Be on the lookout for signs of overtraining though. (Prolonged illness, excessive muscle twitching). I think with your previous conditioning though, you'll be fine.
