How do you eat so much?

Hey all,
I have posted before and got some great advice, but i still think im on this damn plateau for more then a month now. I was told that im not eating enough and that i should be eating more calories, i was eating 1200/day. Ive started slowly increasing my intake but im finding it very difficult to fit the amount of food i need to eat into my day. It was recommended my intake be around 2300cal/day to still be at a deficit. Im very afraid of gaining weight back that i tried my hardest to lose. So far im down about 57lbs since july 2nd. I do encorporate strength training 3x a week and im about to get back into my cardio which i was doing 5x a week. Im about 183lbs now and 5'7" so i know for a fact im still in the "overweight" category. Ive been trying to look at LV's shopping list and encorporating all his stuff into my diet, its not a problem of what im eating, its the amount that i can eat during the day. I dont want to eat when im not hungry bc thats how i got to 240lbs in the first place. I wake up and eat breakfast, usually have a snack 2-3hr later, then lunch, then a snack, then dinner... and by dinner time in my mind its to late to eat a snack since its usually 9-10pm. Will i gain the weight back by eating 2300cal/day? I dont know why but it seems like a lot after being on such a deficit for so long. I want to get down to around 155-160lbs, i believe that would be my target weight. Any motivational advice.. eating advice.. whatever would be appreciated, even though i know ive posted stuff before. Im really tryin not to get unmotivated, i guess i have no where else to turn since most ppl are sick of talkin to me about all this.
 
I supose you should just learn to cook or play around with food a bit.
Maybe if you made food that was new and tastey you would want to eat it.

I may be missing something but I'm wondering why a slimmer should be eating more?
Slimming is a balance between calories in and calories out. If you eat more than you use, you get fatter. If you use more than you eat then you get slimmer. End of.
Anorexia/Bulemia/Body image/Food problems aside, I'm not sure why you should eat more calories. Just keep burning them and eating a healthy diet. (you know what a healthy diet is right? You know that sugar, fat and alcohol should be moderated yeah?)

It's biology.

You can't trick it.

im sorry if i was unclear, the main point i was making wasnt that a slimmer person can eat more, its that i am trying to lose so im on a calorie defecit. But given my past diet of around 1200cal im told im not eating enough, but now when i do try to eat the 2000cal/day (which im not sure if thats correct) i find i cant fit it all in. My point is, how do you fit 2000cal in a day and still manage to eat healthy? There is only so much chicken one can eat lol And only certain snacks that are healthy enough with enough calorie content. I do try to eat 3 meals and 3 snacks per day, but it still doesnt quite add up to where i should be. Also i dont want to start eating more and gain the weight back.

Depends on what you mean by "slimmer"
Your ability to eat more calories and not get fat depends on how you then use those calories.
There are 2 ways to use up the calories.
1. Exercise
2 Metabolism

Looking first at metabolism, this can be enhanced by building lean mass (ie muscle). Muscle is metabolically active and so burns calories just to exist. Take my mate Phil for example. He's the same weight as me but much more muscular. When we both sit at the desk doing nothing, he is burning more calories. When we both get on the treadmill @ 10kph, he is burning more calories. When we both drink a pint of beer, I store more calories, he burns more calories. No fair!
Yes he does look slimmer than me, he does have more definition, more muscle and yes he eats shed loads more than me and doesn't put on an ounce.
(We call him the plague of locusts because any food in the fridge gets inhaled by the boy!)

So, yes, slimmer people can eat more, if they have the muscle to burn the calories, or indeed if they exercise enough.

Slim people with no muscle (like that whatsername Richie) dare not look at a tictac.

As a slimmer I would continue what you are doing, eat healthily and exercise. Guess what? It works!
