Bean/Pasta/Tomato Salad
Serves 2 - 4
1 can black beans, drained and rinsed well
2 large tomatoes, diced largely
1 cup fresh cilantro, choppped
1 medium vidalia or red onion, large dice
juice of 2 limes
zest of 1 lime
3 ounces whole wheat penne pasta, cooked according to package instructions (I used a brand called Fiberwise Penne Pasta that has 12 grams of fiber per serving and doesn't taste like cardboard)
Toss all ingredients together and chill....
The tomatoes give off a lot of juice that the pasta absorbs so you don't need any extra stuff in it though a tbs or two of low fat sour cream would work too
