help eating properly

Hey im 24, about average build 5'11" 170lbs ~10%bf, and am starting to go to a gym again. I bulked up when i was 18-19 ~180lbs but never had a full 6pack really as i was eating a ton... (more like a powergut) Since then Ive gotten to points where thru activity (running,sports,push-ups,crunches,swimming) id gotten myself cut and liked the progress id made on my abs but my upper body and legs had gotten a lot smaller (~160lbs). I am now going back to the gym and working out intensely 3x a week and also walking briskly over a mile and doing lots of crunches and cardio activity at the same time... im confused as to how to eat... i usually eat 6healthy meals a day but i am noticing my abs seem to be collecting some fat as all my muscles get bigger, when i eat fewer calories my muscles dont get much bigger...

Im working on my diet for slowly building and maintaining muscle gains while staying ripped... at this point i dont need massive muscle gains i just need slight gains or to maintain my muscles but burn the fat... can anyone tell me what would work best? i usually eat an energy bar with fat/protein/carbs/vitamins before i work out in the morning and have a protein shake after and then eat whole wheat turkey subs at 2hr intervals thru the day... should i cut the carbs out of my diet after 5-6pm? should i keep eating lots and eventually my muscle gains will eat the fat? should i eat less calories overall?
 
mostly... and vector bars, vitamins and whey protein... altho i do eat oatmeal, rice and chicken, vegetables, fruit, and nuts here and there too, ... and when i eat at my parents i eat homecooked meals with potatoes, veggies, meat, i had chili the other day for example...
