I love pancakes! I've been trying to make them alot more heathly though... I make mine like the 'crepe' or 'blinchiki' style (flat) with 1 cup milk, 3/4 cup flour, 1 egg, and a packet of splenda. With a little bit of oil (just to get the pan greesed up, ~1/2 tea spoon). And they turn out well, but the flour is my biggest issue... It's just white flour. Can you replace it with something else? I don't think you can make whole wheat pancakes (I've never tried... but I could only imagine how those would turn out
). But the reason why I love them is not because they taste great, but because they are so filling and keep me away from 'snacks' later on in the day.
Also because the pancakes are flat, I just use 100% jams (all the benifits of fruit) and roll them up! I'm not sure if farmers cheese is the same as cottage cheese (look similiar...), but add some splenda to it, mixed it with a little bit of jam and you get an awesome healthy filling as well. Still need to figure out how to get the most out of the flour though.
