healthier jambalaya style pasta

1 pound/box spaghetti style whole wheat pasta
4-5 cloves minced fresh garlic
1 drained large 16 ounce can whole black olives
1 sliced green bell pepper
1 sliced small onion
1/2 jar spaghetti sauce
1 pound turkey kielbasa sausage, sliced into 1/8"-1/4" round pieces
3 tablespoons olive oil

Cook the pasta as normal in a large pot and drain when finished. While pasta is cooking, in a separate skillet, brown the turkey sausage if it is not precooked for some reason, or grilling it would be even better. In a large skillet (a dutch oven would be best), pour in the olive oil and sautee the green peppers. Add the onions when the green peppers start to get the least bit soft. Right before the onions are clear and limp, add the garlic and sausage and cook for a few more minutes until the garlic is soft. When the veggies are done, dump the pasta into the skillet (or dutch oven) with the veggies, pour the sauce on top, and dump the olives in too. Stir and mix together and continue heating just long enough to warm up the sauce and maybe caramelize it a little. Heating the sauce up separately before combining would caramelize it even more if you want that. Serve soon after that.




Something similar to this may be on the web, but I just made it up. Any comments good or bad are appreciated. :cool:

I don't really know, I never count anything, I just buy the types of food that are as healthy and as low in bad fat as possible and don't overeat. I usually have no idea exactly how many calories I take in, I just try to stay away from stuff that I know is extremely rich then just eat based on paying attention to my actual hunger level, works for me. I could probably figure it out for other people, but I'm not worried about it at all. I don't even know how many calories I'm eating on a daily basis. Probably somewhere between 1,000 and 3,000. :D
