This was a GREAT recipe from everyday food... totally yummy. We served it over jasmine rice and with broccoli on the side.
indian-spiced braised chicken
serves 4
preptime 15 minutes
1 1/2 pounds boneless, skinless chicken thighs (but I used 4 chicken breasts when I made it)
1 medium onion, halved and thinly sliced
1 can (14.5 oz) diced tomatoes, drained
2 T tomato paste
1 T grated ginger
2 garlic cloves, minced
1/2 t ground coriander
1/4 t cayenne pepper
coarse salt and ground pepper
1/2 c. plain yogurt (I used low-fat)
1/4 c. chopped fresh cilantro
1/2 t garam masala (optional - I didn't use)
cooked white rice for serving
1) in a slow cooker, stir together chicken, onion, tomatoes, tomato paste, ginger, garlic, coriander, and cayenne; season w/ salt and pepper
2) cook on high 4 hours (or on low 8 hours) until fork tender. Stir in yogurt, cilantro, and if using, garam masala.
3) serve over rice!
