gaining and losing weight

so i know this is gonna sound weird but i went from weighing 178 to 190 in 3 days then i went back down to 180 in 3 more days and im alittle concerned. 12lbs is a lot of weight add and drop in a week even if its just water weight which cant be healthy. Usually I do fluctuate between about 178 and 184 at any given time because of the amt of cardio I do because im a fitness instructor so some days ill burn more than 2000 calories. Also if I eat certain foods i feel like my muscles just suck up the nutrients. Ie if i eat chicken i gain like 5lbs and i feel like i can barely lift my shoulders and arms up. is there anyone else that has a similar problem. heres some of my stats im 6ft and about 11%bf. my diet is also very good i talked to someone about it and they said that i might b overtrainin but i recently went on vacation for a month and didnt workout at all and just ate at mantenance but nothing changed.
 
My suggestions :-

- try and weigh yourself the same time of the day on the same scale. The gym machine at 6:30 p.m. will give you a different reading to your bathroom scale at 6:30 in the morning.
- hydrate yourself. Drinking alot of tea/coffee on some days and then water on other days will give you a different result as tea/coffee are diuretics.
- you have said you do alot of cardio. Cardio requires fuel too and you may need to log what you eat and how long you workout for to get a better picture. Look at phelps the olympic swimmer on 10,000 calories a day. A normal person would gain a ton of fat on such a diet but he needs it to fuel all those hours of working out.
