Fried Rice

I can't tell you every specific measure of what I use because I have been making this for so long I can just eye ball it, but I will list the ingrediants.

This is for 2 servings for 2 people 1 serving each.

1 cup of rice (pick your favorite kind)
apple sauce (used only too saute veges so use as much as you would butter or oil)
Onion
Mashed Garlic
Green, Red and Yellow Peppers
2-3 Eggs (depends on how many you want, I use only egg whites)
2-4 tbs Soy Sauce (depends on how many calories you are willing to eat. I always suggest the low sodium soy sauce)

Basically, you cook the rice in a pot and then drain most of the water. You want to keep the rice slightly moist for the actual frying process.

Put some apple sauce in a frying pan and let it heat up. After about 3 minutes throw in all your veggies (you can dice them any way you would like. I usually do long slivers for the onion and peppers). Let these brown a little bit and then throw in the eggs. Make sure you scramble the eggs up a lot so that it will go throughout the meal. Once the egg is cooked you can throw in the rice. Stir the rice often but you can let it sit for 30-45 seconds at times to help cook. I usually stir the rice for about 5 minutes then put the soy sauce on it and continue to stir for another 5-10 minutes.

That's basically it. Really simple and cheap meal. Sometimes I throw in cajun shrimp (sounds weird with fried rice but it isnt) or lemon chicken.
