Flax & Whole Wheat Bread

Adapted from Recipezaar. This is a bread machine recipe, but my bread machine is apparently broken, so I have no clue whether it's a viable bread machine recipe. It does fine in the oven (I preheated to 400, then turned down to 350 when I put the bread in, and baked for about 40 minutes). Makes a really dense but not dry loaf - I can slice it paperthin by hand.

1/4 ounce active dry yeast (1 envelope) = 2.5 tsp
1 1/4 cups warm water
3 tablespoons molasses
1 tablespoon olive oil
1/2 teaspoon salt
1 cup flax seed meal
1 1/2 cups whole wheat flour
1 1/2 cups bread flour less 4 tsp
4 tsp wheat gluten

It made a very sticky dough, and I normally would have added more flour, but I wasn't sure that the stickiness wasn't an artifact of the flax. By taste, it could use more salt, but I'm hesitant to adjust salt proportions in bread - this would be amazing with a little sea salt sprinkled on the butter.

Nutritional goodness (for a whole loaf): 2,133 calories, 53g fat (5.67 sat, 25.52 polyunsaturated), 353g carbs (57g fiber), 78.5g protein. And 142% of your RDA of iron. I've had about thin 4 slices already, which isn't anywhere near 1/10th of a loaf.

Super-picky DD4 ate 4 bites with chocolate chip bribes, and then came around looking for more when that was gone. So this is yummy bread - she doesn't eat anything nutritious.
