This is a great soup, with an asian twist that is fairly quick, super easy, and delicious... i'm only putting approximate values for the ingredients, b/c i make it a bit different each time depending on what i have available, and it works out fine...
1 cup largely diced daikon
1 cup large slices of carrots
1 cup largely diced onions
1 cup of largely chopped celery
3 cups of water
1 cup veggie broth (or chicken broth)
teaspoon of soy sauce
2 fish fillets, in bite sized pieces.
1) put the water and broth into a pot and heat
2) add all the veggies to the pot, keeping the vegetables seperate
3) cook about 15 minutes on medium heat or until the veggies are tender
4) add fish pieces and cook for an additional 10 minutes
If you want to have more broth, add more water, if not, this makes a great chunky soup... serves 2, abt 150 calories per serving. I also like to eat it with some well cooked french bread for dipping.
