Easy Spinach Shrimp dinner

1 bag of baby spinach
several red potatoes cut up into 1 inch cubes
1 lb of peeled medium raw shrimp
garlic, oregano and pepper to taste.

place several large pieces of aluminum foil on a cookie sheet spray with olive oil.

Place the potatoes and fresh chrushed garlic on the bottom season with black pepper and oregano.

Place the spinach on top of the potatoes and the shrimp on top of the spinach

Close the foil around the works tightly. Place in a 375-400 degree oven for about 45 min or until potatoes are done.

Open carefully as steam will escape.

If you like you can sprinkle some feta or goat cheese on top while still hot.

This is fast and easy and tastes great.
