Ok I got this recipe from co-worker & it was in fact as super easy as she promised.
I warn all that it is SPICY... my sinuses are loving it!
Basically I took a rump roast (aka big hunk of pot roast beef) & tossed it in the crock pot. Dumped in a jar of pepperoncinis along with all the liquid. I bet any pickled type thing would work, so if olives were more your style.. might want to try that. I added several cloves of garlic, some whole, some sliced. Placed on the cove & cranked the crock pot to high. Then I left for work for 8 hours.
Came back & it was ready to eat. I smelled the goodness as soon as I opened the storm door! yummy.
The beef gets so tender it shreds. We just put it on slices of bread & it was great. Also added a slice of provolone to one of the sandwiches & it was great!
I know... not uber heathly, but it was extremely easy & much better than a drive thru!
