Minty Mocha
1/4 cup sugar
1/4 cup unsweetened cocoa
1 cup water
2 Tbsp. instant coffee granules
4 3/4 cups skim milk
1/2 tsp. peppermint extract


Combine sugar and cocoa in a medium saucepan; stir well. Add water; bring to a boil, stirring constantly. Stir in coffee granules. Gradually add milk, stirring well. Cook over medium heat 5 minutes or until mixture is thoroughly heated, stirring frequently. Remove from heat; stir in peppermint. Beat with a whisk until foamy; serve warm.

One of my favorite things to do around the holidays is make jars to give to friends and colleagues for little gifts... usually they are quite appeciated and it makes for a tasty treat too..

Here's one for a low fat/sugar free coffee mixture (I personally can't stomach decaf coffee, but if that's your thing - go for it)

Cappuccino Mix
(makes 2 jars)
1 cup powdered non fat, sugare free non-dairy creamer
1/2 cup powdered sugar free chocolate drink mix
2/3 cup instant coffee granules
1/2 cup Splenda
1 tbs ground cinnamon
1/2 teaspoon ground nutmeg
(did you know that 1 tbs of cinnamon has almost 4 grams of fiber in it?)

Put ground coffee (actually ground espresso is richer) into a food processor and grind until a powder, or put in a plastic bag and roll it with a rolling pin)

In a bowl, combine creamer, chocolate mix, instant coffee, splenda, cinnamon, and nutmeg. Stir together until well mixed. Spoon into the jars.

For each serving, take 3 tbs of the mix and mix with 6 - 8 ounces of boiling water... Very tasty.
