I just threw this stuff together and got rave reviews when I took it to our synagogue potluck...hopefully, I got the measurements right and remembered everything. LOL...
This was a 3 step recipe, I guess...
3 C water
3/4 C lentils
1 onion, chopped
2 cloves garlic, minced
2 t curry powder
1 t salt
1 t garlic salt
1/4-1/2 t ground coriander
dash cayenne pepper
Combine in saucepan. Bring to boil. Boil for 5 minutes, then reduce heat. Simmer for 45 minutes.
Combine:
2 heaping T cornstarch w/
1/3 C water
Add to cooked lentils. Also add, 1 (15 oz) can of fire roasted diced tomatoes. Adjust spices to taste.
While lentils are cooking, scrub 5-6 red potatoes and cut into 1/2 inch cubes. Spray 7x11 casserole dish with oil.
Cover bottom of dish w/ cut potatoes.
Sprinkle with garlic salt and lemon pepper
Bake in 450 degree oven for about 40 minutes.
When potatoes come out, pour the lentils over the top and let sit for at least 2 hours.
Bake in 450 degree oven for 45 minutes until hot and bubbly around the edges.
I didn't figure out calories or anything but it only has a small amount of oil and mainly veggies and lentils.
