So cucumbers are so cheap right now that I've been buying a ton of them.
I have to great dishes.
Pineapple Cucumber Salad
1 can of chunked pineapple in juice (or 1 whole pineapple cubed)
2-3 thinly sliced cucumbers
1/2 a red onion also very thinly sliced, unless you really love eating onions
1 handful of fresh mint leaves, finely chopped
Salt & pepper to taste.
(The real recipe calls for 2 or 3 TBSP of olive oil, but I don't think it needs it)
Throw it all in a big bowl and serve or refrigerate for 2-3 hours.
It tends to get a little soggy if left overnight, but would be great thrown on a green salad if left for longer than a day.
Italian Cucumber Salad

5-8 roma tomatoes (depends on how much you like them)
Chopped brocolli, 1-2 cups
1/2 cup low fat italian dressing & 1/8 cup water
Throw in a big bowl and serve or refrigerate for 2-3 hours.
It tends to get a little soggy if left overnight, but would be great thrown on a green salad if left for longer than a day.
