This is basically stolen from the South Beach Diet Book, recipes section... but they're pretty tasty and adaptable...
Lemon Zest Ricotta Cream
1/2 cup part skim Ricotta cheese (or use fat free for even less calories if you like the taste of it)
1/4 tsp lemon zest
1/4 tsp vanilla extract
1 package sugar substitute
Mix together and serve chilled
1 serving is 178 calories, 14 grams protein, 7 grams of carbs, 10 grams of fat, 6 grams saturated fat, 155 mg sodium, 38 mg cholesterol.
The calorie counts wouldbe less if you used the fat free or low fat ricotta.
He's got variations, where he usues
1/4 tsp almond extract
1 package sugar substitute
1 tsp slivered almonds
or lime zest instead of the lemon zest
and a really tasty sounding
Mocha Ricotta cream

dash espresso powder
5 mini chocolate chips
(mix the first 4 ingredients and chill. Serve witht he espresso powder dusting, andthe chocolate chips
