Meringue cookies
1 (.3-ounce) package sugar-free lemon Jello (or any flavor jello you like)
1/2 cup Splenda
6 egg whites, room temperature
1/4 teaspoon salt
1/4 teaspoon cream of tartar
Preheat oven to 250 degrees F. In a small bowl, combine the lemon gelatin and Splenda together.
In a large bowl using your electric mixer, beat egg whites until foamy. While beating, add salt and cream of tartar. Add the gelatin/Splenda mixture to the egg whites gradually (a tablespoon at a time) while beating; beat to stiff peaks.
Drop batter by tablespoonfuls onto non-stick baking sheets. Bake 90 minutes; turn off the oven, open the door slightly (secure with a wooden spoon), and allow cookies to cool in the oven. Remove from oven and store in a tightly covered (airtight) container.

My grandma used to make meringue cookies when I was a kid... and they were awesome...
melt in your mouth crunch... grandma would be proud of these... (I tend to not like things super sweet - neither to the boys inthe office who these got baked for - so if you like a l ittle sweeter -you might want to add more splenda - grandma's recipe called for 1 cup of sugar... i cut that in half...
they are also really tasty with just a dollop of raspberry preserves on them or whatever flavor preserves you choose...
