cookies (the type you eat)

Hi Guys
Finally have my husband joining in to lose weight, which has gotta help me as he does the cooking at night most times.

But he loves his cookies and milk, so if anyone has some easy to cook low fat etc. cookie recipes I would appreciate it.

I've been actually looking for some nice protein style cookies that they make at the gyms ... if I do get ahold of a good receipe, I'll be sure to put it on here.
 
not quite sure, but how about the ones that you feed to babys? They should be sort of healthy - don't you think? I never looked at the ingredients list, but it can't be too bad - don't you think.

I found a recipe online that is pretty low in fat, but high in carbs...I'll post it, just in case you are interested...

Ingredients:
4 egg-whites
1 pinch of salt
150g sugar
1 package Vanillin sugar
1 Table Spoon Cocoa
150g flour

Beat egg-whites with salt until solid. Add sugar, vanillin sugar and Cocoa. At the end add the flour. Stir until smooth. Put Baking Paper on Baking sheet and smooth dough evenly on the sheet, the thinner the better. Leave in a cold space for approx. 15 minutes. Preheat oven to 170 degree celcius (350 Fahrenheit). When preheat is over put sheet in oven. After 10 mitues remove sheet and cut into even strips. Bake for another 5 minutes to make them really crispy. Let them cool down a little before taking them off the paper. The cookies are best stored in an air-tight cookie container, that way they stay crispy longer.

I have never tried the recipe, so I can't really tell you how good they are. I know the Original Store bought ones that inspired this recipe, but they contain a few more other things, so I don't know how these ones will taste. I found them on another forum and the remarks underneath were all very positive.

Sweet Potato Low-Fat High Fibre Cookies.

Ingredients:

1-cup of oatmeal
¼ sweet potato
Dash of Cinnamon
4 packets of splenda (can add more or less if you like)
1/3 cup of water

Mix, and put in the oven for 20 minutes at 350 degrees

Directions:

Take ¼ of a sweet potato, strip the skin off, and mash it down on a plate. Toss the sweet potato in a bowl, and poor half of 1/3 a cup of water inside the bowl. Mix the water with the sweet potato. Then, add the cinnamon and splenda in, and mix. Then, put 1-cup of oatmeal in, mix, and add another half of 1/3 a cup of water, and mix well. You can add more water if needed, but be very careful not to make the mixture to soft.

After this, pull out a cookie pan, spray it with Pam, make cookies with the batter using your hand, and place them on the pan. It should come out to about 8 cookies.

Finally, place the pan in the oven for 20 minutes, at 350 degrees. Take the pan out, set the cookies on a plate, let it cool, and eat!

Enjoy!

It tastes pretty good, and is a great switch up from ordinary oatmeal. Also, its very portable, so good to take on trips. The only other thing you would need is some protein.
 
Another Version I found:

Lemon Meringue cookies

2 large egg whites
1/8 teaspoon salt
2/3 cup sugar*
1 tsp. finely grated lemon zest
1 tsp. vanilla extract

Instructions:

Preheat oven to 400 degrees. Line 2 cookie sheets with baking parchment and set aside. Beat egg whites and salt in small bowl on high with electric beater. Mix until frothy. With mixer still on high speed add sugar gradually and continue beating until meringue peaks stiffly (about 4 minutes). beat in vanilla and then by hand fold in lemon zest. drop meringue from round teaspoon onto prepared baking sheets, spacing 2 inches apart. Set in oven, immediately turn oven off, and let cookies remain in oven for 2 hours. You can leave them in overnight. Peel meringue off parchment paper and store in an airtight container.

Makes about two dozen cookies.

Special Notes:
One cookie contains 23 calories, 0 fat, 0 cholesterol and 17mg sodium.

* I'd use Splenda which would change the nutritional info for these.
 
i dont know much about cooking but try using like the splenda sweetener instead of sugar. it has not got all the calories as sugar.
