Chicken Paella

This one's in the pot as we speak. The smell of the ingredients during the prepwork was pretty tantalizing, so I have good hopes for the end product. Could probably be made healthier through the use of chicken breasts instead of thighs. Can't wait to see what I come out with.
 
Sounds good. Little off the subject, but we have pork steak in bbq sauce cooking in the crock pot. Not sure what to have w/it. Have alot of corn on the cob to eat. Also thinking mixed vegetables.:confused: :confused: :confused:
 
Well I love corn so... Sounds like it'd be just right with bbq pork... mmmm... bbq pork :)

On topic: I have some paella with me at work - will post after I've had lunch.
 
Yes, actually it was - though some might say it needed salt. It wasn't bursting with flavor as it's rather more subtle than that, but it was good. I used long grain brown rice, which I had on hand already cooked (one of the reasons for doing this recipe). I also browned the chicken before adding it to the crockpot.
 
I made this earlier tonight for my boyfriend and I, and we both liked it! As Stingo said, there wasn't a ton of flavor, but it was still good. I used chicken breasts instead of thighs as suggested, and I think that was a good choice. For the rice, I used Jambalia (spelling?) it added a good spice to it, which helped out in the flavoring. So if your going to make this, I suggest you use chicken breasts and jambalia.

As with any crockpot recipes, I'd re-review when you have stuff the day after. The flavors seem to blend better and it is generally tastier. As for the paella, I found it grew on me as I finished off the batch. When I made it there was a ton of liquid which I added in with each individual serving I froze. I liked having it much better without.
