Chicken Kebabs with a Lime Glaze

These are really fantastic for a light meal, and are really refreshing in this summer sun.

You will need:

** chicken, either stir-fry variety, or brest cut into strips
** 3 tablespoons of lime marmalade
** 1 tablespoon of lime juice
** 1 teaspoon of white vinegar
** 1/2 teaspoon of grated lime rind

1. Pre heat the grill to medium. By the way, the glaze gets a bit messy, so make sure the bottom of the grill is lined with tin foil, otherwise you'll have a very sticky grill-pan!

2. Thread the chicken onto scewers, either diagonally with the stir-fry chicken, or in S-shapes for the longer strips.

3. To make the glaze, mix everything together in a small bowl, mixing well so that the marmalade takes on a more fluid texture.

4. Brush the glaze onto one side of the chicken kebab. Stick the kebabs under the grill for 5-10 minutes, or until the chicken is cooked on that side. Feel free to add extra glaze partway through. Once chicken is cooked on that side, flip over and apply glaze on the other side. Leave for another 5-10 minutes, reapplying glaze if need be.

There we go; easy as! Once the kebabs are done, serve with rice (Uncle Ben's do a great range of mircowave rices) or salad or salsa.

Calories vary due to amount and brands of chicken. For two kebabs, I can't imagine them being more than 250 kcals for the pair.
