Chicken 'fried' rice

Those little seasoning packets you find in the International/Asian food aisle are great. I followed the instructions on the back but I did a couple of things different to make it healthier. It's super easy and it makes a great meal.

Chicken 'Fried' Rice

1 3/4 oz. Fried Rice seasoning packet (45 calories for whole packet)
8 oz. cooked chicken breast, chopped (250 calories)
2 cups of cooked instant brown rice (680 calories)
3 sliced green onions (25 cal)
2 tsp soy sauce (6 cal believe it or not)
2 Eggs, beaten (140 cal)
1 cup frozen peas and carrots (75)

I didn't use oil. I used cooking spray to grill the chicken and stir-fry rice.

1. Heat large skillet, spray with cooking spray. Stir-fry rice and green onions.

2. Add the seasoning packet and soy sauce. Stir and fry for for about a minute.

3. Scramble the eggs in a seperate pan (or remove the rice from pan and scrambe the eggs). Then stir the eggs and rice together.

4. Add peas and carrots, and then the chicken.

Serves 4.

Grand total calories for whole dish: 1220 calories.
Calories per serving: 305 calories.

Next time I'm going to try Shrimp or Pork. :D
