3 (bone in) chicken breast OR thighs, OR a combination
1 can Great Northern Beans, drained
1 can Dark Kidney Beans, drained
2 small cans chopped green chiles
2 cans low sodium chicken broth
1 can petite diced tomatoes, drained
1/2 tsp ground cayenne pepper
2 tsp ground cumin
1/4 cup water
2 tsp all purpose flour
In a crock pot set on low, combine both cans of beans, green chiles, chicken broth, diced tomatoes, pepper and cumin and stir. Place the chicken on top and cook for approx. 8 hours. Take chicken out and remove meat from bone, cut or shred. Discard bones. Dissolve flour in water and stir into bean mixture, then stir in chicken. (you can also add a cup of frozen white corn at this time, if desired) Turn setting to high and cook for approx 30 minutes longer or until it thickens, then serve. YUM!
