Chicken and Salad

Hi everyone,

I am not a very good cook. I work full time by the time i go to the gym and then sometimes have night school I get home around 11:00 at night. This doens't give me alot of time to prepare for dinners.

I'm just wondering if anyone has easy dinner recepes with Chicken ( since that's the easiest to make )

funnily enough im havin chicken and salad for lunch in 2 hours :D

get a can of tuna (in water), drain it and throw it into a bowl, chop up some oinons and throw them in, get some sweet corn, chuck that in and mix it all about, if its a bit too dry for you get just a tiny bit of light mayo

i know its just a basic tuna salad mix thingy, but it tastes good ands its quick enough to make



now ill just sit back and wait for someone to come back and tell me thats nutriotanly crap..... :D
 
mboylan86-- it sounds nutritionally okay to me...but it also sounds mysteriously like tuna and salad (instead of chicken).

Here's one that uses 1lb of ground turkey and couldn't be easier. The only prep work involved is chopping an onion, and browning it with the turkey (til the turkey's no longer pink). The rest is just opening cans. (Hopefully you have a crockpot - if not, you can probably do it on the stove, just need to watch it carefully the first time out.)

Alternatively, you could get boneless/skinless chicken breasts... Bring a pot of water to boil, then put in however many chicken breasts you want to cook (making sure that they're not overcrowded). It will take about 15-20 minutes to boil them, depending on the thickness - you can take one out and cut into it - if it's still pink the chicken stays in the pot. Add brown rice - this time bring a can of nonfat chicken broth to boil and whatever quantity of rice the box specifies - bring it to a boil, then turn the heat to low and wait for the time specified on the box. Lastly, blanch a handful of veggies - bring water to a boil, and put the veggies in it for about 2-3 minutes. Fish everything out from its respective pot and you have a nice healthy dinner. (I'd mix fat free/low fat mayo and country dijon mustard together to make the chicken tastier).
