Chocolate Amaretto Cheesecake
10 - 12 Nabisco Famous Wafer cookies, crushed (any plain cookie would work here- including fat free nilla wafers.)
1 1/2 c. Low fat cream cheese (the neufchatel stuff, the fat free tastes, to me, like wallpaper paste
1 c. sugar (spenda would work here as well)
1 c. low fat (or fat free) ricotta cheese
1/4 c. plus 2 tbsp. unsweetened cocoa
1/4 c. all-purpose flour
1/4 c. Amaretto (you can subsitute any cordial you like really - creme de menthe, godiva chocolate liquor, kahula, you name it)
1 tsp. vanilla extract
1/4 tsp. salt
1 egg
2 tbsp. semi-sweet chocolate MINI morsels
Sprinkle chocolate wafer crumbs in bottom of a 7 or 8 inch springform pan. Set aside.
Add cream cheese and next 7 ingredients in a food processor until smooth - or in a big bowl with a electric mixer. Add egg and process just until blended. Fold in chocolate morsels.
Slowly pour mixture over crumbs in pan.
Bake at 300 degrees for 65 to 70 minutes or until cheesecake is set. (turn off oven after an hour and leave the pan in the oven for another 20 minutes- crack the oven door and leave it open for a nother hour. (this is supposed to prevent the top from cracking - i think it works)
Remove pan from oven to wire cooling rack.
Cover and chill at least 8 hours.
Remove sides of pan and transfer cheesecake to a serving platter.
Yield: 12 servings (about 200 calories each -- with the sugar, a lot less with splenda.)\
One of the variations of this is to substitute the ameretto with raspberry liquor an then sprinkle some raspberries on the top - Raspberries and chocolate..
