Blueberry Oatmeal

I found this recipe that I'm going to try out and I wanted to share it.


Blueberry Oatmeal
Ingredients:

1/2 cup steel-cut oats
1/3 cup oat bran
1/2 cup frozen blueberries
1.5 scoops chocolate whey protein powder
Water, as directed
¼ teaspoon salt
Dash of cinnamon (big dash)
Dash of Splenda (big dash)

Instructions:

Add steel cut oats into 3 to 4 cups of water at night before you go to bed. Bring to a boil, simmer a couple of minutes, then remove from heat, cover the pot, and hit the hay. The longer you simmer and/or the more water you use, the larger the bowl of oatmeal, as the oats tend to soak up water like a sponge.

In the AM, bring the oats to a simmer once again on medium-low heat, adding the salt, cinnamon, and raw oat bran. Continue stirring and simmering for 5 minutes, or until you get the desired thickness (you may have to simmer for longer to boil-off some of the water). Turn off the heat, then add the frozen blueberries and some Splenda.

Stir until the blueberries are melted, thus cooling the oatmeal and allowing the protein powder to be added. The consistency should be fairly thick, especially after the oat bran has been added and cooked a bit. You might need to add some water in the AM, depending on how much was boiled-off the night before.

I'm going to try the recipe for breakfast tomorrow. I was recently doing something similar with rolled oats (which aren't nearly as good as the steel cut oats), a protein shake and frozen blueberries. I'll report back tomorrow on how it turned out.

have you tried steel cut oats yet? they're a different texture than regular oatmeal - i haven't quite decided if i like them better or not :D

I bought some yesterday (truthfully, I'd never even heard of them before)...the website says that the recipe is well received by everyone that tries it...I'm crossing my fingers...

And you could always make it and split it over a couple of breakfasts...
 
it's a little chewier than regular oatmeal - so i think it's more satisfying -

what does whey protein give you? other than the obvious protein?
 
Well...I think it's just the obvious protein.

This guy is recommends lots of protein, which I'm going to try bump up in my daily eating. The protein turns the oatmeal from carb-frest to a balance of carbs & protein.
 
snow is on the forecast - but heck if it's gonna snow gimme a blizzard -these 2 inches are driving me crazy - it is the size of the storm that matters :D
 
Ok kids...the jury is in, and the oatmeal is a hit! Leaving it overnight works wonders for the texture. It tasted like regular oatmeal.

I ate about a third of the batch for breakfast. So the batch could last between 2-4 breakfasts, depending on how hungry you are.
 
I love steel cut oats! I make it in my crockpot the night before and leave it on low overnight. If you add bananas to it, it tastes like banana bread. mmmmm

Do you add the bananas with everything else at the beginning or at the end?
