Black Bean Brownies

Ok, maybe "healthy" isn't as accurate as "healthier".

1 box any comercially prepared brownie mix (I used a low fat version)
1 15 oz can of black beans

Blend beans in blender, combine with brownie mix, pour into pan and bake as directed on box. In a 13x9 in pan the recipe makes 24 brownies at about 110 calories each. Brownies come out cake-like, thick and chewy. Mmmmmmmmm.....

Adds fiber and protein to an otherwise total sugar and fat snack.

My oldest son swears he can taste the beans, but everyone else loved them. As someone who needs some sort of a chocolate fix everyday or I will completely blow my diet on a binge, these are great! Proof that a little chocolate can make almost anything taste good. (actually I love black beans, but not everyone does)

I suppose you could healthy-up the recipe a little more by making your own mix, substituting whole wheat flour in place of some of the white flower, some of the sugar for some Splenda, etc. I don't have enough confidence in my cooking skills to get that creative and the only baking I tried with Splenda was a disaster. :rolleyes:
