Beginning the middle of summer on a mountain bike

This is my first post, so bear with me - I have a dialup internet connection.

For personal stats, I'm 19 years old and 232>234ish, depending on my scale's accuracy. Height is 6'1", and I'm wide-chested, flat-footed with a sizable build. I have a decent gut for most of the weight, but definitely a percentage of the body fat on my arms, thighs, and chest. I've calculated that I need roughly 2100>2200 calories to begin weight loss, but I haven't been "counting" because most of it is fresh food.

I've outlined a program I've been trying for the past two weeks in the following sections, and I'd like to know what augmentation/additions you guys would make.

In the morning, I have two eggs for breakfast. Usually a healthy amount of freshly ground pepper and 2-3 tsp shredded cheddar. I've decided to quit the cheddar.

By 2pm or so, I'll have a piece of bread with one slice of roast beef in the middle. I've tried pickle relish on it twice, and it's not bad so I'm wondering if that's a good idea.

Throughout the day I will go outside and get on my 21-speed bike. I keep it in 1st range, between 4th and 6th gear, keeping up a fast pumping rhythm. I live in flat, sandy Missouri floodplains, so there's no real hills to climb, just soft stuff to fight. And 80% humidity or greater, on 95 degree days.

I will remain on the bike for 15-20 minutes at a time, though I do have to stop and take breaks because I become winded easily. I have a path cut through brush in my 4 acre yard, and I make sure that I complete one full circuit before resting, though near the end of each session I sometimes get the feeling that my legs are weakening and I may lose my balance.

I started the biking thing with the idea that I would get better at it and be able to last longer, hopefully building up cardio... But so far, no progress is made. I've always been easily worked into a sweat - and this doesn't bother me, but I figured for all the sweating I've been doing lately I'd at least see some improvement in the endurance department.

I try to drink water, but I resort to sweet tea (1.5 cup sugar/gal) due to my caffeine addiction.

Supper is nearly always supplanted with fresh veggies (we have a garden) and some type of meat. I try to have a palm-sized serving of meat with relatively unsalted veggies, but I do cover everything in fresh ground pepper.

So I'm not sure where I'm at.

Any advice is greatly appreciated, as I move off to get a degree in about eight weeks. My goal is to get in good shape for the beautiful hill country that awaits, and to bring a BMI of 31.0 down to whatever is REALISTIC over that period of time. I hope to stay in contact with this forum for the long haul and adjust to healthier living.
