Oh my, roasted/grilled whole chicken is so much better than boiled! I like to season mine with lots of lemon juice, garlic, and pepper under the skin then broil it on a rack until the dark meat registers 180F. You get a great flavor from this, and it's just as easy as boiling it. Also, the blend of seasonings mellows very easily, so you can still use it in other recipes as you wish (chicken enchiladas, anyone??).
Boiled chicken = bland and rubbery
