Anyone else use CookingLight?

Don't mean to sound like a plug for cookinglight, but it has REALLY helped me...

I never knew how to cook until a little over a year ago. My mom is a vegetarian, and I'm not, so I never learned. I got a subscription to CookingLight magazine. I think I paid around $13 for two years! The mags are huge, but I rarely look at them because a subscription gives you full access to their online recipes. I just keep them for when my sub. runs out. Most of them were easy enough for even me to follow, and now I love to cook and can even make full dinners without even using a recipe. They give you calorie and nutrition content for every one. I am usually only cooking for two, so I cut the meat portion in half, but use the original amount for the sauces or whatever the rest of the recipe is. They tend to say too little and it comes out dry or not enough. It throws the "per serving" amount off a little, but you can usually figure how much extra you're getting. I've made many, many of their recipes and I can't think of more than a few that I didn't like. My boyfriend can't even tell that it's healthy! I think you can see a few recipes before it asks you to subscribe. I'll try to find the great ones to copy and post them later.

The first one I reccomend looking at is Miso Salmon. Had this at the Cheesecake Factory (no clue what Miso was at the time), and it was delicious!!!!!! Had to find the recipe and I did. It's extra healthy with the soy in the miso, and protien and omega-3 in the salmon. My BF isn't a big fan of salmon or any fish and even he loved it. The sauce has such a sweet, sugary taste that it can curb you're sweet tooth!! I have yet to try it with other meat, like chicken, but it would probably be good too.

I don't have much of a sweet tooth, but for those of you that do and need something to satisfy it, look at the Pumpkin Pie Cheesecake recipe. I made it at Thanksgiving and no one could even tell it was low fat. It was also the first pie or cheesecake that I've ever made it it came out great (but leave it in the fridge for at least 12 hrs, not 8 like it says). Hope this helps!!
 
I love the magazine - not only for the recipes but for the articles too (hmm don't men say that about playboy? :D

The website is great too- it's usually current w ith themagazine - I especially like the quick to cook stuff - that can be preparedin 30 minutes or less...
