Workout for Mock UFC

A couple of buddies and I plan on having some mini UFC type tournaments this summer. I say UFC, but it's a little of everything: UFC, kickboxing, and some martial arts. I was looking around on the net for a good program, or decent that I could modify, and found a men's fitness artice:

I have barbells, but I prefer to use dumbbells because of the stabilizing muscles. I have dumbbells up to 45 lbs each.

Is the Men's Fitness workout solid, or should I look for something else?
 
I showed this to a friend of mine who does MMA and he laughed it off. I think he said that you were in danger of dislocating / breaking something if you even tried the dumbell walk!

MMA is primarily technique and fitness based - that's not to say that strength isn't important, but it comes third in the priority list - I don't know if you watched the Coleman vs Shogun fight but it was a prime example of two guys who clearly didn't train hard enough on their cardio.

I'd reccomend circuits (and when I say 'I' I really mean BJ Penn as these are from his book, which is regarded as one of the best on MMA):

1 Minute: Medicene Ball Squats
1 Minute: Upright Rows
1 Minute: Box Jumps
1 Minute: Military Press
1 Minute: Row Machine
1 Minute: Rest

You'll notice that it mirrors the UFC round structure. 5 minutes of activity and 1 minute of rest.

There's not much about fitness in there mind, however there is a LOT on striking, grappling and ju-jitsu techniques.
 
Is there a workout that would be effective? I have barbells, but I prefer dumbbells as they work the stabilizing muscles better.

I was browsing through the New Rules of Lifting recently, but I don't know if that would help me in hand to hand.
