This recipe is designed for a treat in between meals, or as a meal on the go.

Ingredients

  • 1/2 cup flour
  • 1/2 tsp cinnamon
  • 1/2 tsp baking powder
  • 1 1/2 cups mixed dried fruit
  • 1 cup quick cooking oatmeal
  • 1/3 cup peanuts
  • pinch of salt
  • 6 eggs
  • 2/3 cup packed brown sugar
  • 1/2 cup peanut butter
  • 1 tsp vanilla

Instruction

  1. Preheat oven to 350ºF.
  2. Spray a 9 x 9 x 2 inch baking pan with spray.
  3. Combine all dry ingredients; flour, cinnamon, baking powder, and salt in a medium bowl.
  4. In the same bowl, add dried fruit, oatmeal and peanuts.
  5. In a large bowl, beat together eggs, brown sugar, peanut butter and vanilla until smooth.
  6. Stir in dried ingredients.
  7. Pour into sprayed pan.
  8. Bake in oven for about 20 to 25 minutes, or until the inserted toothpick comes out clean.
  9. Cool on wire rack.
  10. Cut into 12 bars and serve.
