Great low carb bread - very quick and easy. Can substitute for cornbread, English muffins, or pound cake.

Ingredients

  • 3 large eggs
  • 3/4 cup almond meal
  • 1.5 tsp baking powder
  • 2 tbsp butter, melted

Steps

Mix all the ingredients together and pour into sprayed loaf pan.

Bake at 400 degrees for 20 minutes.

To make English muffins, use well greased muffin rings, reduce heat and baking time.

Great with chili; consider adding chopped jalapenos, and grated cheddar.

Garlic and herbs could jazz it up.

For pound cake, add vanilla or almond or lemon extract and Splenda for baking.
