What We EatDoes it really matter what we eat as long as we exercise correctly? Sure we need our essentials but as long as we are getting thoses and exercising, are we ok?

Depends on if you are trying to lose weight or maintain the weight you are at now. To lose you need to cut back on calories some.

If you're exercising, if matters EVEN MORE what you eat. If you're weight lifting, definately yes. If you don't eat a very healthy Protein-packed diet while you're weight lifting, you could end up damaging your muscles because they'd have nothing to repair themselves with after a workout. If you're only doing Cardio, then yes, it still matters. Cardio isn't as effective at keeping weight off as weights, so you have to eat fairly healthy there to not gain weight even with the Cardio. In all, why should you care? You should eat healthy whether it matters or not. It's just better that way. You'll live longer, and if you eat healthy while also exercising, you'll get faster and much better results. So to answer your question more simply, yes, it matters, alot.
