I've been there.. =)
I think a case of carbo-cravings is actually a case of wanting a different type of food but depriving yourself of it. The body is sending mixed signals and you wind up substituting (this is only my thought in regards to myself).
I'd suggest when it occurs really taking some time and figuring out what you really want. If it's a particular kind of food, then have that. If you are still undecided, then go for a long walk. It may be boredom in which case you want to stall until your body can start deciphering the craving signals you are getting.
Hope that helps in some way,
Steve

What I find that helps over eating is by adding more fiber to your diet. Try having a bowl of oatmeal for breakfast then for a mid-morning snack have some strawberry's for lunch you can try a peanut butter and jelly sandwich on whole grain bread and for dinner try a salad with protein (steak, chicken etc... I starting putting more fiber in my diet and it suppresed my appetite and stoped my over eating. Let me know if it worked for you.
